I was surprised to see that there was zero fat on this brisket. I smoked it at 225* and began checking it when internal temp hit 125*. Brisket is done when it’s done but this piece never gave up it’s hold and was tougher than shoe leather! Couldn’t serve it to guests so ended up feeding it to the dog. I didn’t know brisket could be this tough. Unfortunately, I’ve got 2 more in the freezer. Not sure I want to spend the time to find out they’re also going to the dog.
