The taste was good but the meat was hard to chew. I'm not new to buffalo, but I usually use ground buffalo. Compared to Wellness Meats stew beef, which I prepared the exact same way I prepared this, this was tougher (while the stew beef was very tender). I still liked this, but I wouldn't serve it to company.
