I have been trying to eat nose to tail, in trying different parts of the cow. But, for me, this just isn't something I enjoyed. A little too grisly and not very "beefy" in flavor which is why I enjoy eating beef. I know a lot of people enjoy head cheese and to them I say, You can have my portion.

This head cheese tastes so much better than it sounds. Just knowing it's mostly offal inspired a good deal of hesitation on my part, even though I understand offal must be included in my diet for health reasons. But once I tried it, I was so pleased. This is more than doable to satisfy part of my offal "requirement". In fact, I would eat this regardless.

The gristly bits in this are intolerable, they literally make me nauseous when I bite into one every other bite. Such a shame because this was my first time ever eating beef head cheese and it tastes delicious and Is a great way to get nutrient dense organ meats on my keto/carnivore diet. I bought either 2 or 3 rolls of this, unfortunately it was a waste of money.
