I had never cooked these before, so I used my fail-proof method...the crockpot. I seasoned it with a little oregono, sea salt & garlic. Very tender, and I served them with a mint sauce. YUM.

Used this in an osso bucco stew recipe. The weight must have been mostly bones, because there was far less meat than I expected. Maybe people who cook with this a lot already know that, but I didn't. :) The stew tasted great, but for the money I was just expecting more meat.
