I combined this chicken with chicken feet to make a meat broth (soup). The combination made a wonderful collagen / hyaluronic acid broth. The chicken meat itself was delicious along with the veggies and herbs I added.

First time buying spatchcock - now we don't want to go back. All the meat cooked just right and was faster to cook - the legs weren't overdone and the breast meat was tasty. Dinner for 2 turned out great with enough left for lunches, also.
