Every element was absolutely perfect. The sweetness from the cherry compote paired with the slight sharpness of the mascarpone frosting balanced each other out beautifully — it wasn’t overly sweet at all, just the perfect combination of flavours. 🤤 And the sponge… WOW! So incredibly moist, soft and smooth. What impressed me even more was how well the cake held up. It still tasted absolutely delicious after three days in the fridge AND after a five-hour journey in the car boot during this heatwave! 😱☀️
