Good food, but poor, unprofessional and embarrassing behavior from young an unexperienced staff

I've always wanted to go visit your restaurant since you opened. However, I didn't make it until last Saturday, and I was really looking forward to this evening. Sadly, it turned out much different than expected, and I cannot recommend your restaurant to anybody:
We arrived punctual and sat down at our table. We were quite quick in deciding that we would like to take a 3-course menu (3 menus á 300 DKK and one menu á 275 DKK) and a bottle of wine and some water. The restaurant was busy, but it gave a nice flavor to the atmosphere.
We noticed quite early that the staff was extremely young, but we didn't put more meaning into it at that point.
After 25 minutes, we got our starters - DELICOUS!
After having finished the starters, the waiter took our plates away and then we waited again 25-30 minutes for our main course. The waiting time was no issue to us, as we could see how busy the young staff was.
I had ordered a pizza - again DELIOUS! My fellow guests had ordered the veal. The one was great, the other full of tendons and practical uneatable. We called the waiter who was very constructive and said he would bring a new one in three minutes. We waited for 20 minutes - me and the other one with the good veal ate a bit but was also waiting for the third person's veal to come. When it finally did, we could have dinner together. Once we had finished, it took 20 minutes before our plates were gone. But now, we were ready for the desert. After waiting some time, the waiter came to us with the message: "Sorry, we have miscalculated a bit on time, so we cannot offer you desert after all as we need your table for the next seating. But we will remove 25% from your bill and not charge you for desert". Curious as to what this exactly meant we asked him. He said he would come back. Which he did. The offer was NOT to remove the desert and additional 25% of the bill as a compensation for the inconvenience. Only to remove the desert (and this was then their idea of a 25% cut). We responded that removing the deserts from the bill would only be the right thing to do, as we were not able to stay and eat the desert. But we thought that more was needed from their side as they had "miscalculated time" and were now basically throwing us out. The waiter went to the cash register once again and then came back. He had now changed the bill from 3 menus to a la carte (3 x 2 courses) which all together is more expensive than 3 x menus. We objected to this and said that we ordered 3 menus and not a la carte and wanted a fair deal. He again went to the cash register. The next thing that happens is, that a new waiter comes (an even younger one) and puts the bill in front of me on the table and says "It was nice having you, please pay as we need the table". I said "We have a deal with your colleague" to which he responded "I am the manager, and this is the deal you get. If you don't pay now, we have to...." but my fellow companion accidently interrupted him. I would have like to have known if he was about to threaten us with police or where this sentence was going. The final deal was that they cut 200 DKK of the bill which was 21%.
This experience is to me completely unacceptable and couldn't have been handled more unprofessional.
With a more experienced and positive-minded staff, anybody can see that the win-win solution would have been for them to either 1) offer the people waiting for our table a glass of wine on the house in the bar (or wherever) while we finished or 2) offer us to take the desert in bar - with a glass on house. Everybody would have been happy. Besides, there were many empty tables at that point of time, which means if someone was really waiting for our table, you could have given them any other table and if more people were to arrive and wait, we would have most likely been done with deserts.
Please educate your staff and never let any other guests have this awful and embarrassing (to you) experience.
