I waited 2 months for my order which never came - on the courier's site it appears delivered, but back in the UK and not at my address.
Seller got involved to solve the matter.
Not an easily sourced product…
Not an easily sourced product (saltpetre) but Surfys had it in stock and delivered it just in time for me to cure an ox tongue, just like my grandmother did, in time for Christmas. The cured meat had a good pink colour and tasted great… just like I remember more than 50 years ago. I have been cooking tongue for a few years but this on had the best colour after cooking which I put down to the curing.
Blind tasting my family really like the meat. Unfortunately there are psychological barriers in electing to eat it!

Found Surfy`s while looking for Black Pudding casings, and after looking at the website, which was well laid out, and easy to use, I put my order through.
Delivery was really quick, even in the rub up to Christmas, and the order arrived as scheduled....
Cant fault the range of goods, and the prices... Would recommend, and will be using Surfy`s again...

Oh wow. Thought the home-cured bacon and salt beef were going to be good but this is a whole new experience in the kitchen. The website and associated leaflet are easy to follow and the cures well packaged. Just need to decide on what is next !
SALT BEEF DRY CURING MIX - Top class product
This was my first attempt at using a dry cure method. The product was ordered directly from Surfy's and received within a few days of placing the order. The clarity of information on all curing products published on Surfy's website was superior to that found elsewhere.
The curing mix was applied directly onto a 2kg slab (not rolled) of organic high welfare brisket in accordance with Surfy's instruction after trimming all excess fat, although not necessary. The mix had all the necessary ingedients - no additions required. The process entailed weighing accurately the quantity of dry mix proportionate to the weight of the meat all as stated in the instructions on the packet (can also be downloaded from the site). As the quantity of dry cure used is relatively small the use of an accurate weighing scale is necessary. Spread the mix over the meat laid on a suitable surface, covering all sides and ensuring the mix adheres to the meat which may require progressive patting. Any excess dry cure not adhering was tipped into the bag. Place the brisket in a zip lock bag or vaccum sealing bag as I did, lay the bag flat in the fridge for the required number of days massaging the bag once daily. Preperation time was around 30 minutes,
My cut required 8 days of curing calculated in accordance with the thickness of the slab of brisket as stated in the instructions. At the end of the curing period the brisket was removed from the bag, washed under a running tap to dispose of the superficial, now liquified cure, and simmered for 3h 30m when tested for 'softness' with a skewer. Best salt beef brisket my guests and I experience for taste, texture and colour.
Previously I had tried the wet method using sea salt, sugar, salt petre (potassium nitrate) and various spice for the cure and found the process of aquiring the ingredients cumbersome and need for the relatively large sealable container for holding the quantity of curing liquor for fully emersing the beef which took up up much space in the fridge. The final product was passable but inferior to the dry cured product.
Be aware of the substantial volumetric shrinkage from the original size when cured and boiled/roasted using the wet or dry method for curing.
Surfy's beef dry cure mix is an excellent product and I will always use this product / method in future. I ordered a 1.5kg pack which arrived unbeknown in 3 x 500g packs for convenience. Very good customer service too.
