A little senewy, but other than that, they're awesome! I wish they were cut so that the senew was along one side for easier removal, but I guess it's not possible.

I was dissapointed that their was a large vein of cartilage running through the majority of each steak.

These are extremely versatile steaks! I use them cut up in an award winning all-meat chili recipe. Like their taste and texture in that dish better than the recipe’s called for sirloin. And, if I want a seasoned and seared pan fried steak, I would put them up against any rib eye out there. Incredibly tender and flavorful.
