Tenderize Beef Kidney by soaking it in buttermilk or a mixture of lemon juice and water for several hours. Then cook with onions, garlic, bacon, or aromatic herbs such as thyme to offset the rich flavor.

Surprisingly, this kidney did not require the vinegar bath and did not have the urine odor normally found. My family loved it, swimming in its Madeira sauce :)

One of the easier organ meats to incorporate in your diet. No need to trim the fat or anything if you're doing a stew in, for example, an Instant Pot. I just cut it up before adding to the pot and it makes a nice stew component. I usually add some regular sort of meat like oxtails or a cheap roast cut.
