Very fresh. Very good quality and quantity. We will buy again and try but I have had other elk meats that were even mixed a little with beef and tasted a little more wild flavor (gamier). This meat is very mild and I honestly didn't get much flavor profile. Wasn't getting a beefy flavor or wild. It was good just couldn't tell you what I was eating if I didn't know. I was lost with the flavor I wouldn't say I was eating beef or elk. Not a strong flavor profile. When most always I can tell and even tell when it's mixed what bite of each I'm getting.

This ground elk meat brought back memories of when I was 7-- the first time I tasted it and it was so good. My folks said elk meat was a very special treat because it was not sold in the grocery store.
