Since 2003 we’ve brewed raw, unpasteurised kombucha the small batch way using the best organic teas and mineral-rich, purified spring water from our well deep in the Sussex countryside. We never use mass production processing techniques such as pasteurising, filtering or synthetic probiotics for shelf stability as we don't supply retail, so our kombucha has more gut-friendly microbes and beneficial yeasts than any processed “kombucha drinks” sold in supermarkets or on Amazon. We only bottle in glass - never in porous polymer plastic-lined aluminimum cans which studies have shown can leech into live, low pH drinks, building up cumulatively in the gut over time - and we never add synthesised sweetners like erythritol or setviol glucosides that can irritate the gut lining causing bloating, diarrhea and cramp - the very conditions our kombucha can help aleviate! Thanks for posting. Sadly there are post codes north of Glasgow and Edinbugh for which a £15 surcharge is applied for our products that are couriered 600 miles from where we brew on the south case to these locations, and it is a special by-hand as opposed to being put on belts due to the fact we bottle in glass as opposed to aluminium cans which are not safe for packing and transiting bacterially active low pH beverages in. In order for us to absorb the delivery charge we therefore have to set a minimum order of £90 for customers in the Highlands etc. to enable us to absorb it meaning that the customer pays only for the products and we foot the bill, otherwise we would take a hit on small orders to these locations. It is frustrating when you consider Royal Mail delivers to all parts of the UK at a set rate, but it would not be an effective method for us due to the breakage rate of sending glass bottles via such a large operation that moves parcels entirely by belt. Hope that helps explain why orders have to be over £90 to northern Scotalnd, and thanks again for posting!

Thanks for your kind review, Martyn. We don't apply any processing such as filtration so our kombucha is a whole/holistic product. We aim to balance the yeasts and acids by minimising the transfer of yeasts in our kombucha to the bottling line by drawing the liquid from the top down without stirrng, so as not to transfer the preponderance of yeasts that proliferate at the bottom of the tank and ultimately to avoid a beery, yeasty brew. So thanks for drawing this to our attention and we are mindful that occasionally - especially when brewing during summer months when airborne wild yeast strains proliferate - a batch will be slightly yeastier than normal, though hopefully not unpalatably so. Such feedback is always appreciated and rest assurred we act on all comments. Gary
