One of the best japanese knives dealers
Dealing with JCK have always been a pleasure. I always get clear answers on all the questions or request. Shipping is always on time and the packaging is always tip top. Never had delivery related issues or purchase challenges. Prices are generally reasonable, not the lowest but perhaps some kind of loyalty discount can help with higher volume of continuous purchase.

Solid knife store
I've been shopping at japanese chefs knife for a while now. What distinguishes this store from other places is that they carry knives that have function in mind. Sure, they sell showpieces too, but they are easily distinguishable from the knives that the average worker needs. Other stores sell knives that are very collectible and expensive, but performance-wise, they are not up to the price. The knives sold at JCK are solid. Some of the best prices around and delivers during work time.

The best online knife merchant
The organization is very professional and their customer service is first rate. The product they carry are of excellent quality. I love this knife how it looks, how it feels on the grip is a masterpiece. Unfortunately I had the luck that it was extremely DULL. Just because of its looks I give it 2 Stars. I had to sharpen it for it to be ok, but of course I'm not a master in doing this. Still I would buy once again from this side under the premise that they CHECK if any shipment is good enough for an end user.

The looks of this knife is the same as the pictures and i was very impressed at the start but upon further inspections and cutting tests of this knife it turns out that the knife is infact not straight nor is the edge you can see a clear steer of the blade edge so the edge is not straight which makes it unable to cut well which resulted in this knife being a useless only good for decoration object.
The knife looks great but...
The knife looks great, and holds well in your hand - but that's where the good ends. Firstly, compared to the other chef knives I own, using the same care routine and polishing, this knife easily its luster (it looks dull most of the time). Also, the metal polish I use also easily gets trapped in the engraving on the blade, and it doesn't really come off from washing, but rather, dislodges itself during cutting and food prep. I had intended this knife to be the workhorse in the kitchen, being of higher steel grade compared to my other ZA-18 knives, but Blue Paper 2 steel is too delicate for everyday use in a home kitchen, at least in my opinion. Firstly, it stained permanently within seconds after my first use cutting a red onion - which left brown spots that took awhile for me to figure out it might be patina, and which turned into black stains after I cleaned and polished those spots. Then, given its higher HRC rating, I thought it might be a good idea to use it for cutting harder food - which immediately chipped the blade irreparably right in the middle along with leaving a few dents around the chipped portion. Admittedly, I may not be an experienced user of Japanese chef knives bought in the shop!
