For the price paid and the fact that…
For the price paid and the fact that you are trying to make yourselves look to be supplying something different to what can be picked up in the supermarket for a 10th of the price I think you could make sure the knives are a little sharper.

Sharpness of a knife is given by the angle. Like a pencil. There is initial sharpness and long-term sharpness. Generally, if the initial sharpness is high, the angle is high, which means that the knife will blunt quicker. If the initial sharpness is not as high, you will be able to maintain the sharpness of the knife long-term by using sharpeners and whetstones.
Most popular and skilled chefs in the world sharpen their knifes very regularly - some even after every use.

There were no 'care instructions' that…
Although there were no 'care instructions' that came with $300 knife. Or explanation of the Edge of Belgravia products. After notifying them, Belgravia reached out to me immediately with Care Instructions and the Begravia Story. Expect lovely brochures in your future purchases.
